
2 cups self-raising flour
1/2 cup sugar
3 tablespoons Sanitarium Crunchy Peanut Butter
1 tablespoon margarine
3 ripe bananas, mashed
1 egg, lightly beaten
1 cup Sanitarium So Good soy drink

1. Sift flours into a large bowl.
2. Add sugar
3. Melt margarine with Peanuts Crunchy Peanut Butter in a saucepan over medium heat.
4. Combine with bananas, egg and So Good.
5. Add liquid ingredients to dry ingredients and mix until just combined.
6. Spoon into lightly greased muffin tins.
7. Bake in a moderate oven 180oC for 25 minutes or until cooked.
Makes 12 Muffins
