
2 teaspoons oil
1 medium onion, finely sliced
2 cups green beans, topped, tailed, & cut into 2 cm lengths
2 sticks celery, chopped
1 medium red capsicum, chopped
415g can Sanitarium Casserole Mince
30 Sanitarium Dried Apricots, chopped
35g packet Malyasian Creamy Satay Mix
3 tablespoons Sanitarium Crunchy Peanut Butter
1 cup water
16 filo pastry sheets
2 tablespoons oil
1. Heat oil in a large frypan. Saute onion, beans, celery and capsicum for 5 minutes.
2. Add Casserole Mince and apricots.
3. Stir in satay, peanut butter and water and bring to the boil. Reduce heat, cover and simmer for 5 minutes, stirring occasionally. Cool.
4. Lightly brush one sheet of filo with oil. Place another sheet on top. Fold in half.
5. Place an 1/8 of the mixture onto one end of filo, tuck into sides in and roll up. Brush with oil. Repeat.
6. Bake in a moderate oven, 180oC, for 30 minutes or until golden brown.
7. Serve immediately.
